"Lobster Tails"

"Lobster tails" are an American adaptation of the famed Sfogliatelle, Italy's famed pastry for the last two centuries.  These are incredibly labor intensive, but so very worth the time and expense.  Layer after layer of painstakingly laminated dough gives the signature flaky, crunchy layers.  Once baking is completed, we fill each one with a lovely pastry cream.
